Old Riga XXL Sprats in Oil are traditionally gently smoked over wood smoke, giving the fish its characteristic, delicate smoky aroma. The large sprats (Sprattus sprattus) are then marinated in mild vegetable oil or rapeseed oil, which preserves the tenderness and juiciness of the fish.
